Baked Ziti with Pumpkin and Sage Sausage
Nothing is better on a chilly autumn evening than a warming, comforting pasta dish.
Ingredients
1 can pumpkin puree
450g sweet Italian or sage sausages
1 diced onion
450g ziti pasta cooked until al dente
1 bay leaf
2 cloves minced garlic
1/2tsp ground nutmeg
Pinch of cinnamon
1/4tsp crushed red pepper flakes
1 cup vegetable stock
¼ cup grated parmesan cheese
½ cup dry white wine
Salt and pepper
Fresh parsley to garnish
Instructions
- Preheat oven to 180°C and remove the casings from the sausage links and brown the meat in a skillet over medium-high heat until thoroughly cooked. Transfer to a bowl.
- Add the bay leaves, onion and garlic to the skillet and cook until the onion is translucent for approximately three minutes. Add the sage leaves, cinnamon, nutmeg, red pepper flakes and salt and pepper to taste and cook for another minute.
- Add the white wine and cook until reduced by half before adding the vegetable stock and pumpkin purée.
- Stir through the sausage before adding the cooked pasta and mix until combined.
- Transfer the mixture to a baking dish. Top with Parmesan cheese and bake until the top is bubbling for approximately 25 to 35 minutes. Garnish with parsley and serve.
