Root Vegetable Salad with Pistachio Vinaigrette

Packed with wholesome goodness and a touch of crunch, this salad is a perfect fusion of comfort and nutrition.

 

Ingredients:

  • 2 medium carrots, peeled and thinly sliced
  • 2 medium beetroots, peeled and diced
  • 1 medium sweet potato, peeled and cubed
  • 2 parsnips, peeled and cut into matchsticks
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 cup mixed salad greens

 

For the Pistachio Vinaigrette:

  • 1/4 cup shelled pistachios, lightly toasted
  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste

 

Instructions:

 

  1. Preheat the oven to 200°C (390°F).
  2. In a large bowl, toss the sliced carrots, diced beetroots, cubed sweet potato, and parsnip matchsticks with olive oil. Season with salt and pepper to taste.
  3. Spread the vegetables in an even layer on a baking tray lined with parchment paper.
  4. Roast the vegetables in the preheated oven for about 20-25 minutes or until they are tender and slightly caramelized. Make sure to stir halfway through for even roasting.
  5. While the vegetables are roasting, prepare the pistachio vinaigrette. In a food processor, blend the toasted pistachios, olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until smooth and well combined.
  6. Once the vegetables are roasted to perfection, remove them from the oven and let them cool slightly.
  7. In a large serving bowl, arrange the mixed salad greens as the base.
  8. Gently place the roasted root vegetables on top of the greens.
  9. Drizzle the pistachio vinaigrette generously over the salad, allowing the flavours to meld together.
  10. Toss the salad gently to coat the vegetables with the vinaigrette.
