Tomato, Peach and Burrata Salad
This refreshing salad is ideal for warmer summer days and takes less than half an hour to prepare
Ingredients
Vinaigrette
½ finely chopped shallot
½ cup olive oil
1tbsp honey
¼ cup fresh basil, chopped
¼ cup balsamic vinegar
1 grated clove garlic
2tbsp freshly chopped oregano
1tsp lemon zest
Red pepper flakes
1tbsp fresh chopped dill
1tbsp fresh chopped thyme
Salt and pepper to taste
Salad
¼ cup toasted pumpkin seeds
11/2 cups halved cherry tomatoes
1cup fresh pitted cherries
225g room temperature burrata
2-3 peaches cut into wedges
Instructions
- Make the vinegarette by combining all ingredients in a bowl and whisking until smooth. Add red pepper flakes, salt and pepper to taste.
- Toss the cherries, tomatoes, and peaches together with one-third of the dressing and allow it to sit at room temperature for fifteen minutes or up to four hours in the fridge.
- Break up burrata balls and add to salad, drizzle over the remaining dressing and top with pumpkin seeds and more fresh herbs.
- Serve immediately with toasted or grilled bread.
