Tray Baked Balsamic Roast Chicken
This tasty, healthy recipe is quick to prepare and ideal for a mid-week dinner.
Ingredients
4 x chicken breast fillets, approx. 180g each
800g cherry tomatoes
160ml balsamic vinegar
80g brown sugar
8 garlic cloves, skin on
Basil leaves and marinated feta for serving
Extra virgin olive oil for drizzling
Instructions
- Preheat the oven to 200°C and heat a saucepan over medium heat. Add the sugar and balsamic vinegar and cook while frequently stirring for two or three minutes until reduced.
- Line a baking tray with nonstick baking paper and place chicken, garlic and tomatoes onto the tray, brush with balsamic mixture and drizzle the garlic and tomatoes with oil and remaining balsamic.
- Baked chicken for 20 minutes until cooked through and golden.
- Serve chicken with basil leaves and marinated feta.
